- 1. What is your current job?
- I am in charge of alcoholic beverage development. At the research lab, we research production methods and breed new yeast strains to give shape to new product concepts.
Sake, which takes on a variety of flavors depending on the type of rice and yeast used and the brewing method, has a complex and diverse production process and a wide variety of styles, so much so that the saying goes, "There are a million styles in sake breweries."Our job is to monitor the condition of the rice, yeast, and sake every day and create the Ozeki style. - 2. Please tell us about your career so far (the themes you have been involved in).
- When I joined the company, I was assigned to the production department, where I worked on managing sake production for three years. After that, I was transferred to the research laboratory, where I worked on developing new alcoholic beverages and conducting research and development to solve problems in sake production. This transfer allowed me to gain perspectives from both production and research and development, which is helping me in my current work.
- 3. What do you want to work on or what dreams do you want to achieve in the future?
- At Ozeki, our company motto is "Advancing to become a pioneering group," and Ozeki employees cherish this spirit. We have developed products that are ahead of their time, such as One Cup Ozeki, which was born from this spirit, and created the market for cup sake. My dream is to consider the new value that is required in this era and develop products and technologies that will be loved by many people, like One Cup Ozeki.
