Enzyme Production Responsible
- 1. What is your current job?
- At Ozeki, we have developed enzymes that dissolve the cell walls of filamentous fungi, yeast, and lactic acid bacteria, and sell them as research enzymes. I am in charge of the production and management of these enzymes. Cell wall-dissolving enzymes are produced by cultivating microorganisms isolated from nature. Because we work with living organisms, we pay close attention every day and strive to produce enzymes stably.
- 2. Please tell us about your career so far (the themes you have been involved in).
- Since joining the company, I have been involved in enzyme production. I have been exploring methods for producing enzymes more stably, focusing on examining culture conditions. I am also working on updating the production equipment to produce enzymes more efficiently.
- 3. What do you want to work on or what dreams do you want to achieve in the future?
- Currently, we are improving our manufacturing environment to produce enzymes more efficiently and stably. We feel there is still room for improvement in the culture conditions for enzyme-producing bacteria and the enzyme recovery process, so we would like to continue to investigate further. We also want to work on developing new enzymes. In fact, we would like to develop new products and completely new enzymes that will follow and bring them to market with our own hands.
