Ozeki Co., Ltd. will open a microbrewery called "Sakigakekura" on October 29, 2025, with the aim of "passing on the techniques of Tanba Toji Brewers and creating the future of sake."
Our company, which boasts a 314-year history of brewing, has opened a new microbrewery, "Sakigakekura," on our own premises with the aim of passing on our brewing techniques to the next generation and taking on the challenge of new creations.

■The philosophy of "Kaizō"
"Kaizō" was born as a "handmade brewery" that we can be proud of for the future.
This is a place where the skills and spirit of Tanba Toji are passed on to the next generation, and where employees themselves can think and take on new challenges in sake brewing.
From this small brewery, we aim to weave a new story of sake that combines tradition and creativity.
■ Background of the establishment
The sake industry is facing structural problems such as a decline in interest in sake, particularly among young people, a shortage of human resources, and an aging workforce of master brewers.
At our company, the mass production system meant that opportunities for employees to experience the entire sake brewing process were decreasing, and passing on traditional techniques was becoming an issue.
In response to this situation, we decided to build a new microbrewery to pass on our technology to the next generation and create new value.
Ten years after its conception, this facility was launched as a project that embodies Ozeki's strong passion.
■Architectural design and features
The architectural design is based on the theme of "visible brewing," and the preparation area is made of glass, allowing visitors to get a close-up look at the process.
The design allows visitors to experience the harmony between people, rice, and water, which is the origin of sake, through the craftsmanship and breath of the brewers.
■ Facility outline
This facility is a small-scale brewery (microbrewery) that can handle all processes from rice washing to koji making, preparation, pressing, and bottling.
Our employees themselves participated in everything from building design to construction and equipment placement, creating the facility from scratch.
Through the handiwork that only a small brewery can offer, we will pass on traditional techniques and train young people, while also becoming a base for generating new ideas and challenges in sake brewing.
