"Ozeki Hiyaoroshi Special Junmai Genshu 720ml Bottle" Limited Edition Release
Our company will release a limited quantity of "Ozeki Hiyaoroshi Special Junmai Genshu 720ml Bottle," which has been certified as a GI Nada Gogo (※), from Friday, September 1, 2023.

What is “Hiya-Goshi”?
The sake is brewed in the winter, and the newly pressed sake is pasteurized (heat-sterilized) and stored over the summer. In autumn, when the temperature of the outside air and the storage room become roughly the same, the sake is bottled raw and sold without the usual second pasteurization, which is why it is called "hiyaoroshi."
By storing the sake over the summer and then bottling it raw, you can enjoy a fresh taste despite the mellow, aged flavor.
About the product
"Ozeki Hiyaoroshi" is a special Junmai sake made with 100% "Inishie no Mai*", a rice variety developed exclusively by Ozeki that is ideal for sake brewing, and "Miyamizu", a famous spring water suitable for sake brewing. It has a crisp taste while still allowing you to enjoy the umami of the rice. Because it is an undiluted sake, you can fully enjoy the rich and complex umami of Junmai sake.
This product is pasteurized once and is packed fresh, so we recommend consuming it as soon as possible after opening.
As autumn deepens, grilled fish such as saury and salmon become richer in flavor, and mushrooms such as maitake and shiitake mushrooms. Enjoy the unique autumn flavors with Ozeki Hiyaoroshi.
* "Inishie no Mai" is a cross between "Hyogo Yumenishiki," a strain of "Yamada Nishiki," and "Waseda Ozeki," which Ozeki revived in 1996. Ozeki independently developed it as rice suitable for sake brewing, and it was registered as a variety in 2007. [Registration number 14777] Because it has a low protein content, when used in sake brewing, it has no off-flavors and brings out the umami of the rice.
*The geographical indication "GI Nada Gogo" is a geographical indication system that protects sake made in Nada Gogo, designated by the National Tax Agency on June 28, 2018. Sake that bears the name "GI Nada Gogo" must meet the following production standards to guarantee the characteristics of the alcoholic beverage.
