Microbrewery "Kaigou" releases its second brew, "Chinu no Natsukaze Junmai Daiginjo," in limited quantities.

Our company will release "Chinu no Natsukaze Junmai Daiginjo," the second sake brewed at our microbrewery "Sakigura," which was completed in October of last year, in limited quantities on Wednesday, May 20, 2026.

 

 

■ About Kaizo

"Kaigura" is a small-scale brewing facility that was completed in October 2025. It was created as a place for the transmission of techniques from Tanba sake brewers and for employees to learn about sake brewing.
A key feature of this sake is that, due to its small-scale brewing process using a maximum of 150 kg of rice, meticulous attention to detail is possible, allowing the brewer's individuality to be fully reflected.

We will promote sake that reflects the individuality of its brewer, including the diverse personalities created by the six Tanba Toji (master brewers).

Furthermore, the first sake brewed by Kaizo, "Tenyo no Sake," was unveiled at our brewery open house held on Saturday, March 7, 2026.
It has been very well received by many customers and is currently sold out.

■ About "Kaigou Shikomi No. 2 Chinu no Natsukaze Junmai Daiginjo"

With a gentle and distinctive aroma reminiscent of white wine, a subtle acidity harmonizes with a soft sweetness, creating a fresh and light flavor. A special brewing process involving a 20% yeast starter ratio and a two-stage fermentation method brings out the flavors derived from fermentation, resulting in a well-defined and pleasant finish when chilled. The harmonious balance of sweetness and acidity gives it a distinctly different character from conventional sake. Enjoying it in a wine glass will allow you to fully appreciate its charm.

The name "Chinu" originates from "Chinu no Umi," the old name for Osaka Bay that stretches out in front of Imazu-go. The name "Natsukaze" (Summer Breeze) reflects the brewmaster's wish that it be enjoyed well chilled in a wine glass.

 

■Master Brewer: Fumiya Igarashi

He joined Ozeki Sake Brewing Co., Ltd. in 50 and has been active on the front lines of sake brewing for many years. Since 17, he has served as the Tamba Toji (master brewer), receiving high praise at sake tasting competitions in Hyogo Prefecture and the Kanto-Koshinetsu area. Examples of his awards include the Hyogo Prefectural Governor's Award at the Tamba Toji Self-Brewed Sake Tasting Competition and the Grand Prize in the Ginjo category at the Kanto-Shinetsu Regional Taxation Bureau Sake Appraisal Competition. He also boasts a record of 12 entries at the National New Sake Appraisal Competition, including 8 gold medals.

Master brewer Igarashi, while building upon his years of accumulated knowledge and skills, emphasizes crafting sake with the perspective of "how it will resonate with today's drinkers." In addition to his sound judgment backed by experience, he actively incorporates the latest knowledge, possessing the skill to design and precisely achieve his desired flavors. He is a master brewer with a proven track record and flexible thinking, unconstrained by preconceived notions, and always looking ahead to new ways of enjoying sake and different drinking occasions.
