Characteristics
Ozeki's proprietary "silver yeast" is used to create a clearer taste.
It uses Ozeki's original "Shirogane Yeast," which was bred at the Ozeki General Research Institute after approximately two years of repeated improvements. The freshness of freshly squeezed sake, unique to unpasteurized sake, is harmoniously combined with the apple-like ginjo aroma, resulting in a refreshing, clear, and clean taste with no impurities.
