All rice used is "Yamada Nishiki rice grown under contract in Hyogo Prefecture's Special A area."
This is a slightly cloudy sparkling special pure rice sake that has undergone secondary fermentation in the bottle based on the unique Ozeki Judan Shikomi sake, which is made by brewing the ingredients in 10 separate steps to maximize the flavor of the rice and achieve a mellow taste and aroma.
In the secondary fermentation in the bottle, the brewed sake is bottled, and then mash (moromi) and yeast are added to produce the sugar. The yeast breaks down the sugar in the bottle, producing carbon dioxide and alcohol. Fermentation takes time, which produces fine bubbles.
The soft, delicate bubbles and smooth mouthfeel that are unique to secondary fermentation in the bottle. The clear sake at the top has a distinct sweetness, while the cloudy sake at the bottom has a silky texture and rich umami, allowing you to enjoy the changes in flavor as you drink.
It combines the refreshing flavor of a special sparkling pure rice sake with the delicious taste of cloudiness, making it enjoyable to pair with a wide range of Japanese and Western dishes.
