First batch brewed: Tenyo no Sake Junmai Daiginjo

The name "Ten'yo no Sake" (Heavenly Blessing Sake) originates from the phrase "Ten'yo no Sakezukuri" (Heavenly Blessing Sake Brewing) inscribed on a wooden plaque with a cedar ball hanging in the brewery. This phrase embodies the sentiment that "good sake cannot be made without good rice, good water, and good yeast. And all of these are nurtured only by the natural environment 'given by heaven.' That is why we must brew sake without forgetting our gratitude to the sun."

For the very first sake brewed by Kaizo, a name that perfectly embodies the spirit of their sake brewing philosophy was deemed fitting, and it was named "Ten'yoku no Sake" (Heavenly Gifted Sake). This name symbolizes gratitude for nature's bounty and their sincere approach to sake brewing.

 

Taste

When you pour the sake into a glass, a delightful aroma reminiscent of apples rises. As you savor the lingering fragrance and take a sip, a soft, natural sweetness derived from rice spreads gently, accompanied by a clear, pleasant umami flavor.
The sweetness doesn't linger, and the balanced acidity and rounded flavor create an impression reminiscent of a dessert. This is a well-balanced sake that showcases the masterful skill of the brewmaster.
