SAKIGAKE GURA

SAKIGAKE GURA

Ozeki's sake brewing began in 1711 in this area of Imazu, Nishinomiya City.
As a refined sake from Nada dating back to the Edo period, it has woven a rich history to this day.
Now that it is widely enjoyed both domestically and internationally,
"Traditional sake brewing" has been registered as a World Intangible Cultural Heritage,
Sake has come to be recognized as a unique part of Japanese food culture.

In this increasingly diverse 21st century,
The brewery "Ozeki" is returning to the origins of sake brewing.
With gratitude for the blessings bestowed upon us, we pass on our five senses and reliable brewing techniques.
As a starting point for opening the door to creative and new sake brewing for tomorrow,
We have opened a new restaurant called "Kaizō".

Pioneering brewing culture.

10 years since the idea was conceived.

The first new brewery in 65 years

At Ozeki, we view brewing not just as a business, but as a culture in itself.
Kaizo is a base for developing this culture to make it broader and deeper.
While making use of traditional techniques, we pioneer new ways of manufacturing with free thinking that is not bound by those techniques.
By having experienced master brewers work alongside young people with potential, we can develop the creativity of our brewers.

The reddish-brown color used for the pillars of Kaizo was,
Shrine torii gates and
It is used in historical buildings.
As a symbol of gratitude and prayer, agriculture and rice farming, which are the origins of the Japanese people,
And we poured our passion for sake brewing into this color.

We cherish that meaning,
We will pass it on to future generations.
